I am a big fan of meals that feel warm, comforting, and are still super fun to eat. These Air Fryer Chicken Meatballs in ginger broth is everything you’d want in a winter evening meal and more! It’s punchy, satisfying, fragrant, and soo easy to make. 

To make the chicken meatballs, we ditch the deep fryer and cook them in the air fryer instead. This means they’re light, healthy, and packed with protein and you can enjoy them guilt-free! I love serving this chicken meatball recipe over a bed of steamed rice with a drizzle of my homemade chilli oil for a fiery finishing touch.

  • I highly recommend using chicken thighs as they stay juicy and make really tender meatballs. Chicken breast tends to yield tough and rubbery meatballs. 
  • Avoid over mincing the chicken and aromatics mixture as that can lead to dense meatballs. Pulse until coarse yet it’s just combined.
  • Make sure to leave enough space between the meatballs when lining them in the air fryer. Crowding prevents browning and even cooking.
  • Taste the broth before salting. Stock, soy sauce, and oyster sauce already add saltiness.

Asian meat balls

  • 250 grams chicken thighs cut into large strips
  • ¼ cup + 1 tablespoon cubed onions
  • 2 sticks celery cut into 3 inch pieces
  • ½ + ⅛ cup roughly chopped spring onion greens
  • ¾ inch ginger peeled
  • 4-5 garlic cloves
  • 1 tablespoon oyster sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon cornflour
  • ¼ teaspoon salt
  • ½ teaspoon pepper crushed
  • 1 tablespoon sesame oil
  • 3 tablespoons finely chopped coriander leaves

Chicken broth

  • 2 teaspoons oil
  • ½ teaspoon finely chopped garlic
  • 1 teaspoon finely chopped ginger
  • 1 tablespoon finely chopped spring onion whites
  • 2 ½ cups chicken stock / broth
  • 1 teaspoon soy sauce
  • ½ teaspoon pepper crushed
  • ½ teaspoon cornflour mixed in 2 tablespoons water
  • ½ teaspoon sugar
  • teaspoon salt optional

Other

  • 1 tablespoon sunflower or any neutral cooking oil
  • 4 cups cooked rice
  • 2 tablespoons finely chopped spring onion greens

Instructions

Meatball mix

  • Add chicken thighs, onions, celery sticks, spring onion greens, ginger, garlic cloves to a chopper or mixer and pulse to get coarse mixture. Add rest of the ingredients – oyster sauce, soy sauce, cornflour, salt, pepper, sesame oil, coriander leaves & pulse once or twice just until it gets mixed well. Transfer to a bowl, make lemon sized meatballs & place on a plate.
    250 grams chicken thighs, ¼ cup + 1 tablespoon cubed onions, 2 sticks celery cut into 3 inch pieces, ½ + ⅛ cup roughly chopped spring onion greens, ¾ inch ginger, 4-5 garlic cloves, 1 tablespoon oyster sauce, 1 teaspoon soy sauce, 1 teaspoon cornflour, ¼ teaspoon salt, ½ teaspoon pepper, 1 tablespoon sesame oil, 3 tablespoons finely chopped coriander leaves

Air frying meatballs

  • Preheat the air fryer to 200C and lightly brush the basket with oil. Place the meatballs in a single layer in the air fryer basket, making sure they don’t touch each other and drizzle a few drops of oil. Airfry the meatballs at 200C for 6-8 minutes till they turn light golden from the outside and cooked from the inside. Remove from the air fryer and transfer to a plate.

Chicken broth

  • Heat oil in a pan, add garlic, ginger and saute on high for a few seconds till fragrant. Add spring onion whites and saute for a few seconds till the rawness goes. Add chicken broth, soy sauce, pepper, conflour slurry, sugar, give a good mix and bring to boil while stirring. Adjust the seasoning by adding salt if needed. Simmer for 2-3 minutes and take off the heat.
    ½ teaspoon finely chopped garlic, 1 teaspoon finely chopped ginger, 1 tablespoon finely chopped spring onion whites, 2 ½ cups chicken stock / broth, 1 teaspoon soy sauce, ½ teaspoon pepper, ½ teaspoon cornflour mixed in 2 tablespoons water, ½ teaspoon sugar, ⅛ teaspoon salt, 1 tablespoon sunflower or any neutral cooking oil

For each serving

  • Add 1 cup of rice to a bowl, place 2-3 meatballs on top, pour 1-2 ladles of broth, garnish with spring onion greens and serve immediately
    4 cups cooked rice, 2 tablespoons finely chopped spring onion greens
