Richa’s Top Tips
- I highly recommend using chicken thighs as they stay juicy and make really tender meatballs. Chicken breast tends to yield tough and rubbery meatballs.
- Avoid over mincing the chicken and aromatics mixture as that can lead to dense meatballs. Pulse until coarse yet it’s just combined.
- Make sure to leave enough space between the meatballs when lining them in the air fryer. Crowding prevents browning and even cooking.
- Taste the broth before salting. Stock, soy sauce, and oyster sauce already add saltiness.
