Chatpata Chicken Bites – Made healthy in the Air fryer

These chatpata chicken bites are my family’s latest obsession. Crispy, spicy, tangy, and full of bold flavors, it’s one of the most versatile chicken dishes ever!

The inspiration for this recipe was the chicken in my chatpata dahi chicken curry. The tangy, bold, spicy flavors of the dish had me dreaming for days. That’s how delicious these chatpata chicken bites are.

It’s really easy to make these – marinate, air fry, garnish, and done. Putting these chatpata chicken bites takes no more than 30 minutes (minus the marination time), and it’s such a simple recipe that you’ll want to make it again and again! And the best part? These air fryer chicken bites are super versatile and easy to serve. Eat them as a 5 pm snack, add them to wraps or sandwiches, or have it as a protein-rich side with a main meal, it works every time!

Ingredients for Chicken Bites 

Chicken: I have used boneless chicken thigh pieces and that’s what I recommend you use as well. Breast pieces tend to get dry, stringy and chewy due to the high temperatures, thereby impacting the resulting texture     

Yogurt: Helps tenderise the chicken and adds a creamy, tangy flavor to every bite

Aromatics: Crushed ginger and garlic in the marination add flavor and aroma, while thinly sliced onions and chopped green chillies add extra texture and a slight heat 

Spices: Red chilli flakes, cumin powder, meat masala, Kashmiri red chilli powder, ground black pepper, and salt add loads of flavor

Oil: For air frying. I have used mustard oil because I love the sharp, smokey flavor. But any neutral-flavored oil with a high smoke point can be used 

Chaat masala: This is a tangy spice powder that packs in a ton of flavor and is responsible for that chatpata or lipsmacking flavor in these chicken bites. I highly recommend not skipping it. You can easily find chaat masala both online and in stores in India, and any Indian store outside India should carry it as well  

Coriander leaves: To garnish. Adds a beautiful earthy freshness to the whole dish

How can I make this vegetarian

This recipe works really well with paneer, extra-firm tofu, mushrooms, or soy chaap. Simply swap the chicken for an equal amount of your preferred protein, keeping the same marinade and seasoning. Since these ingredients cook faster than chicken, reduce the air frying time to 8-10 minutes, shaking the basket halfway through. Paneer and soy chaap are especially delicious here because they soak up all the chatpata flavours beautifully while staying soft and juicy inside.

What can I use instead of chaat masala?

If you don’t have meat masala, use garam masala instead. The flavour will be slightly different, so you may need to adjust the salt since different spice blends contain varying amounts of salt.

Can I use chicken breast instead of chicken thighs?

Yes, you can, but chicken thighs are more forgiving and stay juicy in the air fryer. If using chicken breast, reduce the cooking time by 1-2 minutes and keep an eye on it to prevent the chicken from drying out. 

Can I make these chatpata chicken bites without an air fryer?

Yep, definitely! Cook them in a hot skillet or frying pan over medium-high heat for 8-10 minutes, stirring occasionally, until the chicken is cooked through and lightly charred. You can also bake them at 220°C (425°F) for 15-18 minutes. 

Richa’s Top Tips 

  • Replace chaat and/or meat masala with garam masala: It works great in a pinch! The taste will be slightly different but still really delicious. 
  • Do not overcrowd the air fryer basket: And make sure to place the chicken pieces in a single layer with enough space in between. Cook in batches if necessary to ensure even browning and prevent soggy pieces.
  • Adjust the salt based on your meat masala: Since some brands can be quite salty, taste and adjust accordingly rather than adding extra salt upfront.
  • Slice the onions very thinly: Thin onions soften slightly from the heat of the chicken and add a lovely crunch without overpowering the dish.
  • Toss everything while the chicken is still hot: Adding the onions, green chillies, coriander and chat masala immediately after cooking helps all the flavours meld together beautifully.

Storage Tips

  • Refrigerate: Store leftover chatpata chicken bites in an airtight container in the refrigerator for up to 3 days.
  • Freeze: Freeze the air fried chicken (minus the fresh toppings) for up to 2 months. Thaw overnight in the refrigerator before reheating.
  • Reheat in the air fryer: Reheat at 180°C for 3-4 minutes until heated through. This helps restore the crispy edges.
  • Avoid storing the fresh toppings: Store the onions, green chillies and coriander separately. Add them just before serving so they stay fresh and crunchy.

Serving Ideas

  • With your favorite dip: Mint and coriander chutney, tomato ketchup, mayonnaise, or a yogurt dip work really well with these chatpata air fryer chicken bites. 
  • As a side: Add loads of flavor (and protein) to  carb-heavy meal like pulao or jeera rice
  • Use as filling: Throw these in sandwiches, wraps, rolls, or salads with lettuce, sliced veggies, and a dressing of choice for a deliciously addictive, but healthy-ish meal.

Ingredients

For marination

  • 450 grams boneless chicken thighs cut into 2 inch piece
  • 1 tablespoon curds or greek yogurt whisked
  • 8 garlic cloves crushed
  • ½ inch ginger crushed
  • 1 teaspoon red chilli flakes
  • 1 teaspoon cumin powder
  • 1 teaspoon meat masala refer note 1
  • 1 teaspoon kashmiri chilli powder
  • ¼ teaspoon salt
  • 1 teaspoon crushed pepper

Other

  • 2 tablespoons mustard oil
  • ½ cup thinly sliced onions
  • 2 green chillies slit into 4
  • 2 tablespoons finely chopped coriander leaves
  • 1 teaspoon chat masala

Instructions

Marinating chicken

  • Take chicken and all the ingredients listed for marination in a bowl, mix well and set aside to marinate for 30 minutes.

Air frying chicken

  • Add marinated chicken to airfryer basket, spray 2-3 teaspoons of oil, air fry for 7 minutes. Shake the basket well, brush with 2-3 teaspoons of oil and air fry for 5 minutes.
    2 tablespoons mustard oil

To serve

  • When chicken is still hot, transfer to a bowl, add sliced onions, green chillies, finely chopped coriander leaves, sprinkle chat masala, toss well and serve hot.

  1. The meat masala that I use has a lot of salt in it, which is why ¼ teaspoon of salt is enough in the recipe. You may need to adjust the salt according to the meat masala that you are using.
