But thanks to our trusty air fryer, making veg pakoras at home feels sooo easy and healthy. This aloo and pyaz pakora recipe calls for just a few ingredients and 20 minutes for the most guilt-free pakora and chai experience of your life. So let’s find out how to make pakoras in the air fryer… 

Air Fryer Veg Pakora Ingredients 

Besan: aka chickpea flour or gram flour forms the base of the batter for the pakoras. It adds a nutty flavor 

Rice flour: just a little bit makes the pakoras extra airy and crispy

Veggies: I have used potatoes cut in thin strips and finely sliced onions 

Spices: basic Indian spices like red chilli powder and coriander powder along with hing (asafoetida) and curry leaves for flavor,warmth, and aroma 

Kasuri methi: for a hint of smokiness. A little goes a long way 

Ginger garlic paste: for flavor 

Green chillies: for some heat. Feel free to adjust the amount to suit your tolerance 

Baking soda: just a pinch to help aerate the batter and make the pakoras extra crispy. This is optional but highly recommended for the crispiest pakoras ever

Coriander leaves: finely chopped for a dash of freshness 

Water: to adjust the consistency of the batter and bring everything together

Can I bake these in the oven?

Yes absolutely! Preheat your oven to 200℃ and bake for about 20-25 minutes, flipping halfway through. You can check out my oven-baked onion fritters (kanda bhaji) recipe for fool-proof oven instructions.

Why are my air fryer pakoras not crispy? 

Add a little rice flour to the batter and make sure the batter is thick and not runny. Then air fry the pakoras at 180°C. If the temperature is lower, these veg pakoras tend to turn out dry and hard instead of crispy and crunchy.

Richa’s Top Tips 

  • Make sure the batter is thick and not runny. Runny batter will spread in the air fryer basket creating a mess and won’t give you crispy, even results 
  • Always add a little rice flour to the batter for extra crispy pakoras. Believe me, this one’s a game changer 
  • Don’t skip soaking the potatoes first. This helps get rid of any excess starch, plus prevents discoloration and delivers crunchy results 
  • Air fryer the pakoras in batches in a single layer with enough space in between. Overcrowded air fryer baskets tend to yield soggy pakoras 
  • The exact air frying timings may differ slightly depending on your air fryer. You may need to experiment a little bit to figure out the best timings for your air fryer   

Storage Tips

  • Fridge: These air fryer aloo pyaz pakoras are best served fresh for maximum crispiness. However, you can store any leftovers in the fridge in an airtight container for up to 3 days. 
  • Reheat: To reheat, simply pop in the airfryer at 180°C for about 2 to 3 minutes to bring back some of the crispiness. 
  • Freeze: I would not recommend freezing these as they tend to lose their structure on thawing.

Serving Ideas

With dips: Serve it as a snack with a dip of your choice. These air fryer veg pakoras taste so good with tomato ketchup, mint and coriander chutney, or even some mayo. Add in a cup of hot masala tea for the ultimate Mumbai-style 5-pm snack experience.

Air Fryer Veg Pakora

This air fryer veg pakoras are just as crispy and crunchy as their deep fried counterparts. It's an easy, fool-proof recipe that makes for the best 5 pm snack.

Ingredients

  • 240 gms potatoes approx. 2 cut into thin strips approx. 2mm wide, 1 cup
  • 140 gms onions approx. 2, finely sliced, ½ cup
  • 2 green chillies finely chopped
  • 10 curry leaves finely chopped
  • 2 teaspoons finely chopped coriander leaves
  • ¼ teaspoon red chilli powder
  • ¼ teaspoon coriander powder
  • ¼ teaspoon ginger garlic paste
  • 1 pinch asafoetida hing
  • 1 teaspoon kasuri methi
  • 3 tablespoons besan gram flour
  • 1 tablespoon rice flour
  • 1 pinch baking soda
  • 2 tablespoons water

Instructions

  • Soak potato strips in water for 5 minutes, rinse 3 times and drain the water and press with kitchen towel to remove dripping water, if any. add to a bowl.
    240 gms potatoes approx. 2
  • Add all the ingredients except water and give a good mix. Sprinkle water and mix well. The pakoda mix should not be too watery but just be wet so you can form a round-ish shape with them. This amount of water is good for the consistency that you need for this quantity of mix.
    140 gms onions, 2 green chillies, 10 curry leaves, 2 teaspoons finely chopped coriander leaves, ¼ teaspoon red chilli powder, ¼ teaspoon coriander powder, ¼ teaspoon ginger garlic paste, 1 pinch asafoetida, 1 teaspoon kasuri methi, 3 tablespoons besan, 1 tablespoon rice flour, 1 pinch baking soda, 2 tablespoons water
  • Preheat the airfryer to 180C and brush the basket with oil. Form large lemon sized round pakodas & place on airfryer basket. Keep some gap between each so they get fried evenly.
