I am not joking when I say you will find a jar of these Air Fryer Potato Chips in my pantry at all times. It’s everything you love about potato chips, minus the excess oil and guilt!
My kids are excited about getting these chips in their lunchbox, and we adults love munching on it – with our chai, as a crunchy side with burgers and sandwiches, or just as is between meals. And because a batch of these homemade air fryer potato chips uses just a teaspoon of oil, it’s a whole lot healthier too!

Potato Chips Ingredients
The list of ingredients cannot get shorter than this! Here’s what you’ll need to make potato chips in the air fryer:
Potato: Obviously! I prefer using old potatoes for their lower starch content and easy availability in India. Russet potatoes work best for this recipe if you’re in the US.
Oil: Any neutral-flavored oil with a high smoke point like vegetable, canola, sunflower, etc.
Salt: For seasoning.

There are a number of factors that could be contributing to this:
– Potatoes are too starchy: Soak the potato roundels to get rid of excess starch.
– Not dry enough: After soaking, dry thoroughly before air frying to prevent soggy chips.
– Too much oil: Just half a teaspoon to one teaspoon of oil is enough. Too much oil can cause the chips to be soggy, oily, and not crisp enough.
– Different air fryers have different settings. You might have to add an extra minute or two to the cooking time based on the size, model, and brand of the air fryer you own.
These are definitely healthier than deep-fried or packaged ones since they use only a teaspoon of oil. However, it’s still best to enjoy them in moderation as part of a balanced diet.

Soaking helps air fryer potato chips become crispy, and I would not recommend skipping this step.

- Do not overcrowd the basket. Air fry potatoes in a single layer for max crispiness. Cook in batches if needed.
- When using a mandoline, turn the potato 180 degrees after every 8 to 10 slices for even slices. If you keep cutting in the same direction, the potato will start to tilt, and you’ll end up with uneven oval-shaped chips.
- Slice the potatoes at about 1/8-inch to 1/16-inch. Too thick and they won’t crisp up, too thin and your potato chips will start to turn too brown in places
- Air fryer chips crisp up as they cool down. Remove from the air fryer as soon as they are golden brown even if they look slightly uncooked in places.

- Black pepper: A generous sprinkle of black pepper powder adds spice and another layer of flavor.
- Garlic: Garlic anything is always a win in my books, and a bit of garlic powder takes these chips a notch higher!
- Peri peri: Level up your potato chips by sprinkling about a teaspoon of peri peri seasoning mix. The spicy, tangy, sweet flavors will make these addictive!
- Salt and vinegar: Spraying a little apple cider or white vinegar before air frying the chips and sprinkle some salt after they’re cooked.
- Fresh herbs: Some finely chopped dill or parsley along with salt delivers a fresh, earthy punch.

Air Fryer Potato Chips
Equipment
Ingredients
- 2 large potatoes peeled & sliced into very thin roundels, refer note 1
- ½ – 1 teaspoon cooking oil divided
- ⅛ teaspoon salt
Instructions

Take sliced potatoes in a large bowl with ice cold water. Rinse twice and drain the water. Refer note 2.2 large potatoes

Spread the drained potato slices as a single layer on a kitchen towel and pat dry. Refer note 2.

Preheat the airfryer to 180C and brush the basket with a few drops of oil..½ – 1 teaspoon cooking oil, ⅛ teaspoon salt

Take the potato slices on a wide plate, brush with ½ teaspoon of oil and add salt. Toss them well to make sure that all slices are oiled & salted.

Spread the potato slices in the airfryer basket in a single layer while avoiding them from overlapping each other to ensure even frying.

Air fry for 10 minutes at 150C, tossing them every 3-4 minutes. Brush with a few drops of oil if they get dry.

Air fry them for 2 minutes at 170C for them to turn golden & crisp. Take it out of the airfryer immediately and serve.

Repeat the same for the rest of the potato slices.

Notes
- Use a mandolin on lowest setting (1) or a sharp knife to slice potatoes into very thin rounds for best results.
- This step is important to remove the excess starch in potatoes which helps in air frying them into crispy chips.
- Till the time you use them, keep sliced potatoes soaked in water, drain, dry & then use or else they turn brown.
