Sooji Fries

Did you ever think you could make crunchy fries from sooji? Turns out you sure can! They are called sooji fries and are every bit as addictive as the classic French fries.

The kids are going to love this one! Imagine a plate of French fries, but crunchier and a whole lot healthier – that’s sooji fries for you!

Made from whole ingredients like semolina and veggies, these sooji fries strike the perfect balance between nutrition and taste. My kids love eating these with my homemade tomato ketchup, and ask for it in their tiffins all the time! But a plate of these hot semolina fries also make for a fun 5 pm tea-time snack for the adults!

Sooji Fries Ingredients Overview

Making these sooji fries require just 7 pantry staple ingredients + water. The main ingredient is sooji aka semolina. We also add veggies like carrot and zucchini to up the fries’ nutritional game. They are then seasoned with chilli flakes, oregano and salt to add lots of flavor and aroma. You’ll also need oil for frying.

  • You can use any neutral-flavored oil like vegetable, canola, sunflower or peanut to fry these fries. 
  • Make sure to keep the fries at about 3mm to prevent them from breaking apart during the frying process. 
  • Make sure to flip the fries half way through the process if you are making these in the air fryer. 

Frequently Asked Questions 

How to store sooji fries leftovers?

Even though it is best to serve these hot for the best flavor and texture, these fries remain perfectly crunchy for up to a few hours. I add these to my kids’ tiffin all the time and my daughter claims these remain fresh until her lunch break. 

But if you are making a larger batch then you can store any leftovers in an airtight container in the fridge for 2 days. Simply reheat in the air fryer before serving again to crisp them up!   

Can I add other veggies to these fries?

Zucchini, carrot, and bottle gourd (lauki) will probably work best in this recipe as they can be grated easily.

Sooji Fries

Another recipe on my tiffin-series, these sooji fries are a healthier, more wholesome replacement to regular French fries. The kids love these too!

Equipment

Ingredients

  • ½ cup semolina 100 gms
  • ¾ cup boiling hot water
  • ½ teaspoon oregano
  • ½ teaspoon chilli flakes
  • ¼ teaspoon salt
  • ¼ cup grated carrots
  • ¼ cup finely chopped zucchini
  • 1 tablespoon cooking oil + for deep frying

Instructions

  • Heat a wide bottomed pan.
  • Add all ingredients except semolina & oil to the pan and boil for 1 minute.
    ¾ cup boiling hot water, ½ teaspoon oregano, ½ teaspoon chilli flakes, ¼ teaspoon salt, ¼ cup grated carrots, ¼ cup finely chopped zucchini
  • Add semolina to the pan & cook without cover for 4-5 minutes.
    ½ cup semolina
  • Switch off the heat.
  • Add 1 tablespoon of oil to the pan & mix well. The mixture will leave the sides of the pan.
    1 tablespoon cooking oil + for deep frying
  • Transfer to a bowl & knead while its still warm.
  • Roll the dough between 2 greased sheets of parchment paper to a 3mm thick disc.
  • Cut the rounded sides to form a square & cut out the sooji strips.

For Deep frying

  • Heat about 1 ½ inches of oil in a deep kadai or pan. Once the oil is medium hot, drop the sooji strips into oil.
  • Do not overcrowd the pan to avoid the sooji fries from sticking to each other.
  • Fry on medium heat until they are golden brown. Transfer them to a plate. Repeat with rest of the strips till all of them are fried. Serve hot.

For airfryer

  • Preheat the air fryer to 200C and lightly brush the basket with oil. Place the sooji strips in a single layer in the air fryer basket, making sure they don’t touch each other.
  • Cook the sooji fries in the air fryer for 12 minutes while flipping every 3 minutes until they are browned and crispy.
  • Remove the sooji fries from the air fryer and transfer them to a plate. Serve hot.

Notes

  1. Dough to be rolled into 3 mm thick to get crispy fries.
  2. If its rolled thin, the fries will tend to break.
  3. Oil should always be medium hot.
