Lychee Soda

If you’re looking for a quick and easy summer drink recipe to help you cool off during these HOT days – I’ve got you covered! This lychee soda is a slushy-like fizzy drink made with lychees, sugar, cream, soda and ice. Perfectly sweet and SUPER refreshing!

Lychees are back in season and I’m STOKED about it. Probably one of my most favorite fruits, and I’d argue: the best summer fruit. 

Not only do I love eating lychee as is, I also just love anything lychee-flavoured. So, I’m always looking to test recipes incorporating lychee come summertime. Some playing around later and this Lychee Soda was born – lychees, sugar, cream, soda and ice blended together into a slushee and served up in a margarita glass. Think: cream soda, but lychee-flavoured. It hits 5 o’clock on a summer evening and I’m already off in the kitchen making this. 

If you’re hosting a girls night or a play date for the kiddos, this one’s perfect. All homemade with ingredients you bought yourself which always makes me feel extra good. But, if you’re making this just for adults, you could even booze this up for a cocktail night by blending some vodka or tequila along with! 

You’ll be surprised at how quickly this comes together, making this lychee soda is no different from blending up your morning smoothie. I just make sure to get my lychees from the farmers market beforehand for the best taste – but of course, this will work with any fresh lychee. 

  • All you need is 5 ingredients (one of them is ice!), 5 minutes, and a blender for this easy fizzy lychee drink 
  • This recipe is a total crowd-pleaser and works for all age groups and summertime occasions 
  • It’s a seasonal recipe so you want to make this ASAP! 

Ingredients You'll Need to make Lychee Soda

  • Lychees – Fresh lychees from the farmers market are your best bet for this soda. The street sellers also always have some really amazing lychees that I purchase whenever I go for a summer drive. Any fresh lychee will work – from the grocery store or the markets. You *could* use canned lychees but this is a seasonal recipe so the fresher the better! 
  • Cream – This really lends to the texture/consistency of this drink so don’t skip it! I use Amul fresh cream for this and it really ties together the recipe. 
  • Sugar – To sweeten the drink just a tad bit more. You can use any sugar or sweetener of your choice here. 
  • Soda – Either Kinley / Schweppes soda water will work best here. You just need any soda / carbonated water for this!
  • Ice – This is what will give the drink that slushee-like texture. Do not skip or this will not work! 

Richa’s Top Tricks to make the best Lychee Soda

  1. A high-speed/high-powered blender like Nutribullet or Ninja will work best for this – but you can also make this in our desi mixer (use the small masala jar) or in a food processor as well.
  1. Blitz / pulse the drink at intervals rather than blending it consistently in one go – this will ensure that slushy-like texture.
  1. Serve IMMEDIATELY or it’ll start to melt and change texture! This isn’t a make-ahead recipe but rather something you whip up at the time of serving. 

Frequently Asked Questions

  1. What if I don’t want a slushee texture? Can I omit the ice?

That’ll be a completely different drink altogether! Omitting the ice would leave you with lychee chunks in the drink which isn’t ideal. If you want more of a blended texture, skip the blitzing step and just blend for 30-45 seconds and it’ll be more smoothie-like. You could also alternatively pour more soda on top of the glass when serving. 

  1. I don’t have any cream on hand. Any substitutes?

If you don’t have fresh cream, you can sub both the cream and sugar for a scoop of vanilla ice cream.

Lychee Soda

Ingredients

  • 10-12 pitted lychees
  • 2 tablespoons chopped lychees
  • 1 ½ cups ice approximately 20-25 cubes
  • 1 tablespoon cream
  • 1 ½ tablespoon sugar
  • Soda as required

Instructions

  • In a high-speed blender or food processor, blend the peeled and deseeded lychees along with sugar, cream, and ice cubes. Pulse the mixture at intervals to achieve a slushy-like consistency. Once the ice breaks down completely and the mixture turns into a granita or slushy texture, it's ready.
  • Pour the lychee blend into a margarita glass, leaving some space at the top.
  • Top the drink with the chopped lychees and add soda as per your liking. Serve immediately to enjoy the refreshing slushy texture. This recipe is best prepared at the time of serving.
