This Mango Chia Seed Breakfast Drink is the perfect way to quirk things up for the first meal of the day. Chia seeds are known for how healthy they are and this drink is a really fun, filling and refreshing way to consume them!

I'm hanging on to the last of those mangoes. With my dear life. Because I LOVE them plump beauties. Mangoes and I are BFFs. And nothing can come between us. This Mango Chia Seed Breakfast Drink makes its way to our breakfast table at least three times a week these days. Because it's perfect. It's thick and smoothie-like so you can have big satisfying gulps, but it can also be spooned up if you have all the time in the world.

I usually pair it with Coconut Milk because coconut takes anything up a notch and mango and coconut were made for each other. Just like Mango and I. Chia Seeds add some major crunch and a pudding like texture to this drink. While they taste great, they are also extremely healthy because of the Omega 3 Fatty Acids present in them. Together with a spoonful of honey, this is one breakfast dish/drink/smoothie-type that you are going to want make over and over again. Once mango season runs out, I'm going to try this with strawberries? blueberries? bananas? kiwi? I have a long list.

The ingredients you need for this recipe are pretty basic and easy to find. Here's what you'll need:

  • Coconut Milk - This is the creamy white stuff you get when you blend coconut flesh with water. It tastes a bit sweet and nutty and is used frequently in South Indian cooking. But if you don't have it, don't worry! You can use regular milk, yogurt, almond milk, or soy milk instead.
  • Chia Seeds - These are little black or white seeds that you can get at any grocery store. They're super healthy and have lots of fiber, protein, and good fats in them. When you mix them with liquid, they turn into a thick gel-like substance that helps thicken up your recipe.
  • Honey/Maple Syrup/Sugar - You'll need a little bit of something sweet to add to your recipe, like honey, maple syrup, or sugar. If you don't have one of these, you can always use your preferred sweetener.
  • Mango Puree - This is just mashed-up mango that's been blended into a smooth paste. Mangoes are sweet and delicious and work great in this recipe, but you can use any fruit pulp you like. I use homemade puree of 2-3 ripe mangoes but you can always use the store-bought kind too!

  • 1 cup Coconut Milk sub with regular Milk, Yogurt, Almond Milk, Soy Milk
  • ¼ cup Chia Seeds
  • 2 teaspoons Honey Maple Syrup or Sugar work too
  • 1 cup Mango Puree or any other Fruit Pulp

Instructions

  • Combine chia seeds, honey and coconut milk in a bowl and set aside for 10 minutes to let the seeds absorb the liquid and thicken it
  • To assemble the drink, start by pouring mango puree to fill up half the glass. Top it with the coconut milk and chia seed mixture.
  • Refrigerate for at least half an hour or overnight. Serve Chilled
