Health Mix Pancakes are a tastier version of health mix and a healthier version of pancakes. Health Mix Pancakes are made by replacing half of flour with health mix in the regular making of pancakes. About Health Mix Pancakes

Sathu Maavu Or Health Mix is a nutritious and healthy blend mix made of multigrains like Whole grains, Millets, Cereals, Pulses, Nuts etc. Sathu Maavu is used for making porridges but I wanted to try alternates for kids to enjoy and hence these healthy pancakes.

These pancakes are healthy as there is no white sugar, white flour and even baking soda is very less. I have not used baking powder for this recipe to keep it simple. This recipe is without eggs and with wheat flour do try it out and enjoy. Do you have kids who are not fond of porridge then you should definitely try this.

Sathu Maavu or Health Mix is so filling for breakfast so do try to include it in your kids breakfast often. I have shared a basic version of pancakes you can altger it as per your taste. Check variations section for more ideas.

I always look for alternates for porridge recipes as both my kids are not very fond of it, atleast mittu will have it twice a week but this boy its really tough to feed him any porridge, infact he calls payasam / kheer as porridge. But as he loves whole grains and pulses and takes it in the form of sundal, I don’t force him with porridges. I doubt he had lots of baby food porridge that he has an aversion to the texture now, am sure he might like it in few years till then am going in for alternates like this.

Health Mix Pancakes Ingredients

  • Flour – I have used equal amount of wheat flour with health mix powder. I used homemade wheat flour.
  • Health Mix – I used homemade sathu maavu or health mix.
  • Milk – Boiled cooled milk should be added, do not add raw milk. I used cows milk you can use any milk.
  • Sugar – I have used cane sugar you can replace it with brown sugar or coconut sugar regular white sugar too.
  • Baking Soda – Baking soda is added but a very less measure. Baking soda helps in making the pancakes soft and give a porous texture.
  • Butter – Butter is added for making the pancakes non sticky and also gives a great taste and flavour.
  • Salt – Salt is added for a balance and to life up the sweetness.

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup sathu maavu
  • 1/4 tsp baking soda
  • 3-4 tsp cane sugar
  • 2 tsp butter and for greasing
  • a pinch salt
  • 1 cup milk boiled, cooled
  • 1/3 cup water adjust according to the consistency

Instructions

  • To a mixing bowl add 1/2 cup wheat flour, 1/2 cup health mix, 4 tsp cane sugar, 1 tsp butter, a pinch salt, 1/4 tsp baking soda.
  • Using a whisk mix this well first.
  • Now add 1 cup milk to it.
  • Whisk well to form a thick batter.
  • Add water little by little.
  • Whisk well without any lumps.
  • The batter should be flowing without any lumps, adjust water accordingly.
  • See the consistency slightly thick but flowing.
  • I used my 1/3 cup measure to scoop out the batter. You can use any deep curved ladle for this.
  • Heat dosa tawa, check by splashing water over it. There should be bubbles appearing with a mild shh sound then the dosa tawa is ready. Slightly spread butter over the tawa.
  • Pour on the preheated dosa tawa, do not spread. Keep the flame in low.
  • Bubbles will start appearing.
  • See the bubbles are seen.
  • Cook covered for 1-2 minutes or until the top looks cooked.
  • Open and flip over. Cook for another 1-2 minutes.
  • Flip over and your healthy pancakes are ready!
  • Health Mix pancakes are ready.

Notes

  • The tawa temperature is very important. If it becomes too hot, sprinkle water wipe off with a cloth then proceed.
  • Also each time check the tawa temperature before adding the batter. When you splash water you ashould hear a mild shh sound not a sharp one.Maintaining the tawa temperature is very important to get perfect pancakes.
  • I did not add cardamom powder as the homemade health mix already had it and was aromatic.
  • You can use homemade sathu maavu mix or buy a good one from supermarket and use it.
  • These pancakes are not fluffier as the regular pancakes as these are made with wheat flour and health mix powder, also there is no baking powder in the recipe but still tastes so good..soft and tasty. Do try and you will thank me later.

Health Mix Pancakes Step by Step

Variations

  • You can add 1/4 tsp vanilla essence or butterscotch essence for a different flavour.
  • Instead of wheat flour you can use multigrain atta too.
  • Add 1 tbsp coco powder for a chocolate pancake version.
  • You can mash and add 1 small banana to make banana pancakes.
  • Add 1/4 tsp baking powder to get more fluffy pancakes.
  • Add 2 tbsp choco chips in the batter or while serving.
  • Serve with honey or maple syrup.
