Clear Soup is a very easy, flavourful and healthy soup with the inclusion of many vegetables. This Soup is wholesome and filling for lunch or dinner and a healthy alternate too. Veg Clear Soup is one of the popular soup orders in restaurants.
About Clear Soup
Clear Soup is a soup made by simmering vegetables in a liquid either stock or water along with mild seasoning salt and pepper. Cornflour is mixed with water and added to make it slightly thick just as in restaurants however if you wish you can skip it.
I am not a big fan of soups and I prefer creamy soups than the clear soups but hubby loves clear soups. But slowly my preference is changing and have started to like all soup recipes.
Sweet Corn Chicken soup and this Veg Soup both are hubbys favorites. I tried to recreate the restaurant taste which I tasted long back and it came pretty close to it as it had a thumps up from hubby. Yes mission accomplished!!

Clear Soup Ingredients
- Vegetables -You can use any vegetable of your choice. I used carrot, cabbage, corn, capsicum, beans, spring onion. You can use mushrooms and other vegetables.
- Spices – I have used just salt and pepper. You can use oregano or other herbs of your liking.
- Thickening agent – You can either use cornflour or rice flour to thicken the soup. You can skip this too.

Clear Soup | Veg Clear Soup
Ingredients
- 1/2 cup carrot finely chopped
- 1/2 cup cabbage finely chopped
- 1/4 cup sweet corn finely chopped
- 1/4 cup beans finely chopped
- 1/4 cup capsicum finely chopped
- 2 cups water
- 1 tsp cornflour mixed with 1 tbsp water
- 1 tbsp spring onion white finely chopped
- 1 tbsp spring onion green finely chopped
- 1 tsp pepper powder
- 1/2 tsp sugar
- 1/2 tsp crushed pepper
- salt to taste
Instructions

Heat 1 tsp oil add 1 tsp garlic, 1/2 tsp ginger and 1 tbsp spring onion white all finely chopped.

Saute for a minute.

Add 1/2 cup carrot, 1/2 cup cabbage, 1/4 cup corn, 1/4 cup beans. 1/4 cup capsicum. I used frozen corn, if using fresh corn boil and then add it. Also if you like capsicum to be more crunchy then add it after the other veggies are cooked.

Saute for few minutes or until teh raw smell of the vegetables leave.

Add 1 tsp pepper powder, 1/2 sugar(optional) and required salt to taste.

Give a quick saute.

Add 2 cups water. If you have vegetable stock you can add that too.

Let it boil.

When it starts to boil cook covered. Cook until veggies are cooked, they should be slightly crunchy not too mushy so keep checking.

Let it boil for 2 mins.

To another small bowl add 1 heaped tsp cornflour with 2 tbsp water, mix it well to form a slurry and set aside.

Add cornflour slurry to the soup.

Let it boil until the soup turns slightly thick.

Add 1/2 tsp crushed pepper.

Add 1 tbsp spring onion green.

Give a quick mix and the soup is ready.

- You can use white pepper powder if you have replacing black pepper.
- Adjust cornflour according to the desired thickness consistency you want your soup to be.
- You can also add cream style corn along with the vegetables for extra flavour.
- Sauteing the veggies before is purely optional but it will avoid the raw smell of the veggies so I always do it.
